I just got Cook's Country magazine in the mail. I like the magazines helpful info. There was a recipe for Salad with bibb lettuce, avocados and bacon with tomatoes. Almost like a Cobb salad. Well, I made it as a special at the restaurant: Diced avocados, prosciutto and cherry tomatoes on top of washed crisp bibb lettuce w/ creamy roasted garlic yogurt dressing. The salad's ingredients helped in balancing each other out. The creamy avocados helped the lack of fat feel in the yogurt dressing (it's better than using mayonnaise, like the original recipe) This recipe to me was much healthier. Here's the recipe for Creamy Roasted Garlic Yogurt Dressing: 1 cup of low-fat yogurt, 2 tbsp of dijon mustard, salt and pepper, roasted garlic (check my group database for recipe), 2 tbsp of good extra virgin olive oil. With a wooden spoon and bowl, just mix ingredients together, and adjust for taste.
