Corn Souffle

Another year, Thanxgivin' has arrived...
But this time it's not with my family, but with close friends who should be family members ours. I was in charge of bringing a dish with corn in it...
hmmmm...
What could be exciting? and of course tasteful...
lately i've been fallen madly in love with corn cakes...If you ever go to Cheesecake Factory, you have to try the Chicken Stuff Tortillas. It comes with my fave masa corn cakes :)
Well, how was i goin' to turn this fave into a great dish?
I searched and searched recipes online, and voila! (eh...like my french..eh? )

Well, the host emailed me and said she would like my help to set up thanxgivin' and wanted me over in an hour and half. Ohhhh nooo! with all the work i have been doin' , plus chasing my son and my husband :) .... i forgot that, because of the holiday, stores should be closed :(
What an idiot am I? Well... Walgreens is always open. So i hopped in my car and drove to our local walgreens...yeah!!! they were open...grabbed my cans of corn and Jiffy Corn Muffin Mix (yeah...that part made me happy, this mix takes away so many steps in baking). Time was up! I couldn't find my other ingredients...so i drove down the street and remember the local latin shop we have down the street... and they were open? yup...it's wierd i thought it would be a ghost town on thanxgivin'... i guest not, even a auto shop was open. oh well...
Got my other ingredients, drove home... rush around the house, called my friend and told her while we set up, i will cook my side dish there..
She was fine with it. Grabbed my family hopped in the car, and on our way we go :)

Well, i took 2 eggs and beat it slightly til combined and add it to a medium sized mixing bowl. Opened the 8 1/2 oz box of Jiffy Corn Muffin Mix and added that to the bowl, along with: 1 cup creamed corn, 1 cup whole kernel corn (drained). i added some salt and cumin (it's not int the recipe...but why not?) Chopped up some pimientos (about 2 tbsps worth) and added that and mixed the batter til everything was combined. Chopped my medium green pepper (only half) and 2 medium onion and sauteed it in 1/2 cup butter (ohhh gosh, there's that fat!!!). Then i sprinkled this sauteed mixture ontop of the batter in the bowl all around and pour in the melted butter as well. Then i poured the mixture in a bakin' pan. Then spread a thin layer of the 1/2 pint of sour cream on top of the batter. Sprinkled on 1 cup...well i used the whole bag... two cups of Mexican Shredded Cheese blend. Done! That really didn't take long. Well, i added it to a 4oo hundred degree oven covered with foil and allow to bake with out coloring for 20 minutes. Then i removed the foil to allow it to color.
mmm...just imagine see this corn cake like mixture bakin' all bubbly with melted cheese and and crispy browned edge,plus it rose like a souffle, but technically it's not a souffle :)
And everyone loved it :)... i can't wait to try this again. Just for a regular family meal... this is an awesome side dish :)
