Talk about cross utilization...
A couple of days ago I made Breakfast Quesadillas... using the flour tortillas and salsa I made that day before to make a hearty breakfast.
I basically rendered some bacon, added onion, peppers and mushroom, cilantro, shredded leftover roasted rosemary garlic chicken, and some leftover white cheddar cheese from the potato au gratin... voila!
Basically made scrambled eggs with all the ingredients above except for the cheese.
Placed it on one-half of the tortilla, shaved some cheese and and folded over and baked in a 350 preheated oven for a couple of minutes, cut it into three and served it with salsa :)
