Sweet Potato & Crab Croquettas & Lime Chile Aioli

Everyone seemed to love this one today. It's sweet and Spicy with a tangy hot sauce. I was so in love with this one :)

Croquettas

3 Sweet potatoes baked til tender and peeled
2 fresh corns, peeled, boiled then grilled
1 small red bell pepper small diced
1/2 red onion small diced
1/2 cup cream cheese, whipped
1 whole egg
1 can crab meat (back fin is fine for this)
1/2 bunch fresh cilantro leaves chopped
1 cup of japanese white panko
1/2 tbsp whole grain mustard
2 tbsp mayo
1 lime,juiced and zested
2 tsp sambal olek
2 tsp paprika

Mix all the ingredients well, you want to be able to form a ball (scoop them out using a melon baller- these are bit size). Then roll them in panko again and fry til golden brown.

Lime Chile Sauce

1 jalepeno
5 limes juiced
1/2 bunch cilantro
1/4 cup fish sauce
2 tbsp sambal olek
1 whole fresh egg
1 or 2 cups canola oil

In the food processor blend well the jalepeno, lime juice, cilantro, fish suace, sambal olek and egg. With the processor groin'... slowly add the oil. You want it at the consistancy of ranch dressing... not mayo.

Plate up

Place the sauce on the bottom... mound the balls on top of each other... dizzle the sauce ontop of the balls.

I garnished it [ i did them as amuze...so it was different presentation... i forgot to take a pic :( ] with a mixture of small diced red bell pepper, lime zest and sesame seeds.
