Tuna Nigiri w/ Spicy Cucumber Relish

Today's Amuse that I made...I molded the sushi rice...on a 1/2 hotel pan... layered the rice with thin slices of cucumber and tuna. Cut them into small one-bite squares.

Made a relish from: fine dices of cucumbers, red onions, jalapenos. Mixed with sugar, soy sauce, fish sauce, sesame oil and sambal olek (which is a spicy blend of chilies and garlic).

And put a dollop on top of the nigiri.
I wanted to make something simple and clean. I made over 40 pieces... imagine doing' this for a party :)
