Orange Chicken Red Chef Way :)

 I had a great time making this and the sauce is so delicious.  I looked up a couple of different recipes for Orange chicken.  Of course mine is different, because as you can see, I did not batter fried the chicken and I added several vegetables.  In addition, I used chicken stock instead of water and fresh squeezed oranges.  And served it finally with jasmine white rice.

Orange Chicken Red Chef Way 
Serves 4-5
  • 2 boneless chicken breat, cut into 1-inch pieces
  • salt and pepper
  • 1/2 cup broccoli, blanched
  • 1/2 cup snow pease, blanced
  • 1 bu green onions, cut into 1-inch pieces and blanched
  • 1/2 cup carrots, julienne (matchsticks)
  • 1 each red bell pepper, sliced & halved to 1-inch slices
  • 1/2 medium white onion, sliced
  • 1 tsp red pepper flakes
  • 1/2 tsp minced garlic
  • 1 cup chicken broth
  • 1 cup orange juice (or 6 oranges juiced)
  • 1 lemon juiced
  • 1/3 cu rice wine vinegar
  • 1 cup brown sugar
  • 4 tbsp low sodium soy sauce
  • 2 to 6 oranges zest (depending how far you want to go :) )
  • 1 tsp grated ginger
  • 3 tbsp cornstarch
  • 2 tbsp water
  1. As you can see, as part of the instruction, some of the preparations for the ingredients are already stated....moving along...
  2. After the broccoli, snow peas, green onions were blanched I placed all in one big bowl.
  3.  Then I sauteed the carrots and placed in the same big bowl.
  4. Next I sauteed the red bell peppers, white onion, pepper flakes and minced garlic together, when done placed in the big bowl.  Seasoned and tossed the in sesame oil and soy sauce.
  5. Next, I seared(browned) the seasoned chicken (salt and pepper) in the same pot removed it and placed aside in a different bowl separated from the vegetables. (plus don't worry about the "particles" left from browning the chicken, we will deglaze the pan by the next step in making the sauce, since will add more great flavor to the sauce.
  6. Now, it's time to make the sauce:  Just combine the chicken broth, orange juice, rice wine vinegar, brown sugar, soy sauce, orange zest and ginger and bring to a simmer.  Thicken the sauce with the cornstarch and water mixture.
  7. Add the chicken back ans simmer for 1-2 minutes.
  8. Add the  vegetables, remove heat and mix.
  9. Imediatley serve with your favorite side dish.
