Yes, I know! This is something easy...why am I posting this? Well, not everyone know how easy it can be to prepare a lighter lunch on the go with a ease. I'm used to taking last night's dinner for lunch, or buy a meal, or an expensive salad, etc. This is no hassle, but yes there are people who think that there is nothing healthy or light they can take with them and enjoy it. Just wanted to give some tips... For quickness I use prepared salad mix ( you can choose from spinach, spring mix, iceburg mix to romaine mix), roma tomatoes chopped ( I buy one tomato for each day so that there is no rotting tomatoes in my cooler later), Tyson has ready to eat grilled chicken (this one is southwestern, this is a great flavor, next time I want to toss some corn, black beans and shredded cheese into my salad for a southwestern mix with chipotle dressing...yum). I separated the hot chicken from my greens and veggies with a piece of deli paper, it helps out alot, and don't close the lid until the chicken cools down a little bit.
