Shrimp Scampi Pasta


This was quite easy to make as long as you had all the ingredients ready.  After making the dish, I decided to change some things about the recipe I came up with to make the dish much better.  First, from the written recipe I decided to eliminate the use of the crab flake Surimi (aka imitation crab  meat),  used only 1/2 a pound of linguini instead of 1, and add chopped onions and more bell peppers.  The origin recipe I used is the Shrimp Scamp Bake from Allrecipes.com, this is where you will notice the use of dijon-mustard.  And trust me it's worth to put the dijon-mustard.  So here is the final recipe...

Shrimp Scampi Pasta
Serves: 4
  •  1/2 pound linguini
  • 1 1/2 tbsp olive oil
  • 1/2 medium onion, chopped
  • 1 tbsp of minced garlic
  • 1 pound large/jumbo shrimp, peeled, devained, tail-off
  • 1 bell pepper sliced of red and green or either (lol...understand?)
  • 1/2 cup of sliced mushrooms
  • 1 tsp (or more if you prefer spicy) of red chili flakes
  • Salt and pepper
  • 1/2 cup of blanched broccoli
  • 1/4 cup dry white wine
  • 1 cup butter
  • 2 tbsp dijon-mustard
  • 1 lemon juiced and zested
  • 1 tbsp minced garlic
  • 1/2 cup vegetable broth
  • 1/4 bunch of parsley (flat-leave) chopped
  • 1/2 cup Italian-blend cheese
  1.  Boil the pasta.
  2. In a large pot, heat up the olive oil and saute the onions.
  3. Add the garlic and shrimp.
  4. When the shrimp is cooked half-way, add the bell peppers, mushroom, red chili-flakes, salt and pepper.
  5. Remove all items from the pot into a lrage bowl with the blanched broccoli.
  6.  In the pot still on the stove, deglaze the pan with the white wine.
  7. lower the heat and add the butter, dijon-mustard, lemon, garlic and vegetable broth.
  8. Simmer for one minute, doesn't really take long.
  9. Turn off the stove.  And remove the pot from the heat.
  10. Add everything that was in the bowl into the pot with the sauce.
  11. Toss the pasta with the fresh parsley and cheese.
  12. And when I say, serve immediately...I mean it!
