Shrimp and Crab Rice


I was interested in making a one pot meal and in the mood for some shrimp.  This was a great and easy recipe that I came up with from an idea that one of my friends had served me once a couple of months ago which was yellow rice and with shrimp and crab-meat mixed it.  Hope you enjoy it ;)  Well to start you basically cook the yellow rice separate.  Then in another pot cook the seafood mixture with vegetables then you add the yellow rice into the saucy mixture.  This would be a great and easy way to do jambalaya, paella (spanish seafood rice) and arroz con pollo (chicken and rice) when you are short on time :)  Hopefully I will do these fast version of the listed dinner items above later in my blog, so excited about it, I can't wait...lol.  One thing about this recipe that I was a little worried about would be the fact that you guys wouldn't be able to find the canned okra, corn and tomato mix at your local grocery store...so just in case you don't, I find an awesome recipe on Allrecipes.com: Okra, Corn, Tomatoes Recipe .  FYI:  When using the that recipe, be sure to cute the recipe in half by changing the serving calculation to 3 from 6. Plus the can has more liquid, so I would suggest adding 1 cup of vegetable or chicken broth to the mixture.   Also, even though its not in the recipe, adding a splash of white wine after sauteing the carrots, celery, onion and bell peppers can give this recipe a pop! And if you prefer spicy you can add chili pepper flakes in the cooking process or hot pepper sauce at the end of the cooking process to spice it up.



Shrimp and Crab Rice
Serves 6 to 8

  •  4 cup cooked yellow rice
  • 2 tbsp vegetable oil
  • 1/2 cup small diced carrots
  • 1/2 cup small diced celery
  • 1 medium onion chopped
  • 1 medium green bell pepper (or red...your choice) chopped
  • 2 cups of peeled and viened, tail-off raw shrimp
  • 2 (14 oz) cans okra, tomatoe and corn mix
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 cup imitation crab meat
  • 2 tbsp chopped fesh parsley
  • salt and pepper to taste
  1. In a large pot sweat the carrots, celery, onion and bell peppers.
  2. Add the shrimp and saute for another minute.
  3. Add the okra mixture and season with onion and garlic powder.
  4. Bring to a boil then lower the temperature to simmer.
  5. Add the imitation crab meat and heat up.
  6. Turn off the heat and add the chop parsely and season the mixture with salt and pepper and taste.
  7. Then scoop the rice into the saucey mixture and gently fold in all the rice.
  8. Serve immediately :)
