RECIPE
GoReChef: Ethiopian Red Lentil Soup

SERVINGS: 4-6
INGREDIENTS:
1 tbsp Olive Oil
1 medium Onion, diced
1 clove of Garlic
1 tbsp chopped Ginger
3 tbsp tomato paste
2 tbsp GoRedChef Berbere Blend
3 cups low-sodium vegetable broth
1 cup dried Red Lentils
1 tsp salt (optional)
½ bunch of Cilantro, chopped
4 cups cooked Basmati Rice

INSTRUCTIONS
In a medium sized pot, heat up the olive oil.
Sauté the onion, garlic and ginger until tender.
Add the tomato paste and stir constantly for 1 minute.
Add the Berbere blend.
Then slowly add the broth and constantly stir until mixed well.
Then add the lentils and salt.
Bring to a boil, lower the heat and simmer covered for 30 minutes or until the lentils are tender.
Stir in the cilantro and serve with basmati rice.
