Banana and Cream Bread

Banana bread makes me so happy and it's so simple to make.  And the sweetness is just right, not to sweet and so delicious warm and cold :)

Banana & Cream Bread


  • 4 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of Salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cup AP flour
  • 8 oz cream cheese, almost room temp
  • 1/2 cup powder sugar
  • 1/2 teaspoon vanilla extract


  1. Preheat the oven to 350 degrees. 
  2. Set one banana to the side in a medium bowl
  3. For the mixing process, you can use the mixer or do it by hand.
    1. Smash the bananas.
    2. Add the melted butter and beaten egg.
    3. In another medium bowl: add the salt, sugar, flour and baking soda.
    4. Sieve the flour mixture and set aside.
    5. Slowly add the flour mixture while folding the cake batter.
  4. Pour the mixture into a greased baking loaf pan
  5. In the mixing bowl: whip the cream cheese with the, set aside banana, powder sugar and vanilla extract.
  6. Scoop the cream cheese mixture and place the scoops in the center of the bread mixture. 
  7. Place in oven and back until the inside is cooked through 15 to 30 minutes depending on your oven.
